My ideal food is healthy and simple. I live in a New York City apartment without a working oven at the moment, and so I'm always looking for easy things I can make. Plus, I'm often away from home for about 15 hours a day. Which means I end up eating pizza and take-out and Subway.
But this weekend I was reading Mark Bittman's EAT article in the New York Times magazine, and got the exact reminder I needed. Everything he makes is simple, real, healthy, and looks delicious. I think, I can do that.
Then, I discovered that his "Minimalist" videos on the New York Times website and had to turn away after an hour, because I could easily spend an entire afternoon watching him cook. Each little video (think three minutes, tops) makes me think, I can do that! In the span of half an hour I watched him make authentic and easy Pad thai, Strawberry fool, cucumber salad, as well as host Jamie Oliver, who made an amazing looking and also easy-to-make parmesan chicken cutlet with prosciutto and lemon while charming the pants off everybody.
